No Bake Fruit Loops Rainbow Bars

While the kids were swimming outside, I was busy inside creating Rainbow Bars to sneak into their lunches Monday morning.  Rainbow Bars are like Rice Krispy Treats, but with Fruit Loop cereal instead.  You can quickly make these while the kids are at school, and ready to serve as a St. Patrick’s Day after- school or dinner treat.

Here’s what you’ll need: 6 tablespoons margarine (works better than butter in this recipe), 16 ounces of mini marshmallows, and 10-12 cups of Fruit Loops, parchment or wax paper and cooking spray.

Line a 9 x 13 pan with wax or parchment paper, coat with cooking spray and set aside.  In a sauce pan, melt 6 tablespoons of margarine over low – medium heat. Once melted, add mini marshmallows and stir until melted and smooth.  Once melted, remove from heat and let cool slightly; if the margarine marshmallow mixture is too hot, it will cause the cereal to become soggy.  Pour mixture over the Fruit Loops and thoroughly mix, coating evenly.

Firmly press cereal mixture into the pan, I used wax paper coated with cooking spray to press into place.  Place pan into the refrigerator to cool for approximately 20 minutes, then grab the ends of the wax paper to easily lift out of the pan.  Cut into squares using a sharp knife lightly coated with cooking spray to avoid sticking and enjoy!

Total prep and cook time: 30 – 40 minutes.
