No Bake Fruit Loops Rainbow Bars

  While the kids were swimming outside, I was busy inside creating Rainbow Bars to sneak into their lunches Monday morning.  Rainbow Bars are like Rice Krispy Treats, but with Fruit Loop cereal instead.  You can quickly make these while the kids are at school, and ready to serve as a St. Patrick’s Day after- school or dinner treat. Here’s what you’ll need: 6 tablespoons margarine (works better than butter in this recipe), 16 ounces of mini marshmallows, and 10-12 cups of Fruit Loops, parchment or wax paper and cooking spray. Line a 9 x 13 pan with wax or parchment paper, coat with cooking spray and set aside.  In a sauce pan, melt 6 tablespoons of margarine over low – medium heat.   If you’re looking for a kid friendly St. Patrick’s Day , I have just the thing.  Not only is this recipe easy, the kids can help every step of the way.   My three leprechaun’s and I created Shamrock Baked Spinach Tortilla Chips this afternoon. The ingredients and tools needed are simple and the kids loved prepping and cooking with little help from me. You’ll need spinach tortillas or wraps, cooking spray, salt to taste, and shamrock cookie cutter(s) and your favorite dip; we used classic humus. Start by preheating your oven to 375*. Place one tortilla on the counter, and press firmly down on the shamrock cookie cutter moving side to side to ensure the cutter pierces all the way through.  If the edges are resistant, use cooking scissors to trim.   I have to say I never used to like Irish music. In fact, when I met my hubby some 13 years ago, I just happened to be bar hopping with my girlfriends, and stumbled into the Harp Inn in Costa Mesa. He was playing with his band, The Fenians. What I remember most about that night, besides the cute bass player, was not so much the music, but the vibe that the music created; the singalongs, the dancing, the smiling faces.   When I woke-up this morning with a 102 degree fever. I chugged down some Tylenol, and got busy on creating a fun Leprechaun trap with my son Tyler this afternoon. What I thought was going to be a ton of work, ended up being one of the best bonding experiences together.
