Are you ready for some football? The Big game is this Sunday, and everyone is busy planning recipes for their upcoming Super Bowl Party. My husband always gets together with his college friends at a different house each year to watch the game together.

Since it is our year to host the party, I wanted to make some unique and fun dishes that I know his friends will enjoy. I went to Smart & Final to pick-up some of my favorite First Street Brand ingredients and spent the afternoon testing recipes. One of my favorite recipes that I can’t wait to serve on Super Bowl Sunday are the mini baked potato bites that I made. My children loved them, and gobbled them all up within minutes.

The recipe is super simple to make, and I would recommend making a double batch. While I was shopping for my Super Bowl groceries at Smart & Final, I learned about their “Final Score” Super Bowl online sweepstakes. Mini Baked Potato Bites

Ingredients:

1 Package of Baby Gold Potatoes
1 Cup of First Street Mild Cheddar Cheese
2-3 Strips of First Street Bacon
2-3 Green onions
1/4 Cup of First Street Sour Cream

Easy Mini Baked Potato Bites Recipe

Directions:

1. Slice off each end of the potatoes, and then slice them in half to make “potato circles.”

2. Roast the potatoes at 375 for 30 minutes.

3. While the potatoes are roasting, cook the bacon. Once the bacon slices have cooled, crumble to make bacon bits.

4. Take the baked potatoes out of the oven, Sprinkle cheese on top of the potatoes and then return to the oven for 1-2 minutes (or until the cheese has fully melted).

5. Put the cheese covered potatoes on a dish and top with sour cream, bacon bits and diced green onions.

6. Serve.
