10 Minute Lemon Chicken Recipe

Our garden is producing more lemons than we could have ever dreamed, and that means that I get to be creative making lots of lemon recipes this Spring for my family. After a busy day working in LA, I found myself tempted by wanting to eat out of dinner ~ but decided to stay home and cook something healthy. I was on a mission to cook a quick and healthy dinner, and thought lemon chicken would be the easiest. I got some of the lemon olive oil I’ve been saving to make something delicious with, chicken tenders, capers and started to create what would become our new quick and healthy weeknight dinner.

What do you need?
1 large lemon (2 if they are not organic/homegrown)
2 Tbl. capers
1 package (1 pound) fresh chicken tenders
3 jarred artichoke hearts (chopped)
3 Tbl. olive oil (we used lemon olive oil)
1 crushed garlic clove
Rice
Parsley (optional)

Here is the easy part…in just 10 minutes!

1. Heat the olive oil in a medium size dutch oven.
2. Once the olive oil has heated, add the garlic. Saute for about 1 minute.
3. Add the chicken tenders, juice from (1 regular lemon or 1/2 of homegrown lemon), lemon slices from (1 regular lemon or 1/2 of homegrown lemon), capers, artichoke hearts.
4. Cover the dutch oven and cook (stirring occasionally) for 8-10 minutes over medium heat or until fully cooked.
