Apple Sausage Brussels Sprouts Casserole Recipe
Brussels Sprouts are in full season, and now is the time to take advantage of the healthy benefits of this vegetable with your children. After coming home from a road trip with a bountiful of brussels sprouts, I created this delicious recipe that the kids loved…and they didn’t even feel like they were eating vegetables.
This recipe is simple, and your kids will love the array of flavors. Made within just minutes, this recipe makes the perfect winter weeknight meal for your family to enjoy.
Ingredients:
- 1 Pound of Brussels Sprouts (chopped)
- 2 Tbl. olive oil
- 2 Garlic cloves (crushed)
- 1 cup of mozzarella cheese
- 1/4 cup of parmesan cheese
- 1 Apple
- 1 Package of Chicken and Apple Sausage – sliced (I used Aidell’s from Costco – not sponsored)
- 1 package of your favorite noodles
Directions:
- Preheat the oven to 350 degrees
- Cook the pasta per package instructions, and then drain
- In a sauce pan heat one tablespoon of olive oil
- Then add the garlic and Brussels Sprouts, and cook for about 3-5 minutes
- Remove the Brussels sprouts from the pan and set aside
- Add then add the second tablespoon of olive oil and sausage.
- Cook the sauce for about 3-5 minutes before removing from the pan
- In a large baking dish; add the pasta, brussels sprouts, sausage, apple and cheese. (Mix well)
- Bake for 20-30 minutes
- Serve warm
