Kid-friendly Avocado Soup Recipe
It was a busy workday for me, and I needed to figure out a quick and painless for dinner last night. When I looked around to see what I could toss together, I saw a large bowl of avocados staring at me from my friend Caryn. She had picked these delicious avocados especially for me to enjoy, and I wanted to create a delicious recipe with these fresh avocados.
I tossed a couple of ingredients into my blender and in less than 10 minutes dinner was ready. We ended up serving the soup warm to the kids last night, but I thought it tasted better cold when I had it for lunch in the afternoon. We served it with a warm piece of Italian bread, and the kids enjoyed every bite!
Ingredients:
- 3 avocados
- Juice from 1/2 of a lemon
- 1 Tbl. olive oil
- 1 onion
- 3 stalks of celery
- 2 1/2 cups of chicken broth (vegetable to make it vegetarian)
- 1 cup of half and half
- Dash of salt and pepper
Directions:
Mix all the ingredients until smooth in a blender. Serve cold with a slice of avocado.
