Banana Pumpkin Spice Waffles Recipe – OC Mom Blog


Now that it is starting to feel like Fall in Orange County, it is the best time to start cooking with the flavors of the season. Over the weekend, I made these delicious banana pumpkin spice waffles for the kids, and they loved every bite. You can easily make them into Paleo by using coconut oil/flours/butter instead of traditional ingredients. They are super easy to make, and is a great way to mix-up your kids normal breakfast routine.

I encourage parents to allow their kids to help with making the waffles by having them put the ingredients into the blender. The recipe might end up a little “off” but the kids will never forget the memories made while cooking breakfast with their parents.


  • 2 bananas
  • 1/2 cup canned pumpkin
  • 2 Tbl. pumpkin spice
  • 5 eggs
  • 1 tea. baking soda
  • 1 tea. baking powder
  • 1 tea. vanilla extract
  • 1/2 cup melted butter
  • 1/4 cup vegetable oil
  • 1/2 cup flour
  • 1 Tbl melted butter for brushing the waffle iron


  1. Put all of the ingredients into a blender or mixer. Encourage your kids to help with putting the ingredients into the blender for you.
  2. Mix the ingredients well.
  3. Brush the melted butter on the waffle iron.
  4. Pour the batter into the waffle iron and cook for 3-5 minutes.
  5. Serve warm with maple syrup
