Bell Pepper Pizza Recipe

Do you have a picky eater? I know that I sure do in my house. Getting my youngest to eat vegetables is always a challenge, and I have to be extra creative to get nutrition into his growing body. Melissa’s Produce provided me with some beautiful Enjoya peppers this week, and I decided to try making bell pepper pizzas out of them.

Guess what? My picky eater ate every bite!

What I love about this recipe is that it took me less than five minutes to prepare. Plus, there was hardly any mess in my kitchen after preparation. It is my new favorite weeknight meal!

Enjoya peppers are my favorite probably because they are so pretty. But, really because they taste so good. They are slightly less sweet than yellow bell peppers, are crunchy and juicy – making them perfect to use for this recipe. Every time I see them available on the Melissa’s Produce website or in the market, I always purchase a bunch.

Bell Pepper Pizza

Kid-friendly vegetable recipes

Ingredients:

3 Enjoya Peppers (If you don’t have them, I recommend yellow or red bell peppers)
1 Cup marinara sauce
2 Cups mozzarella cheese
1 Cup mini pepperoni (or your favorite pizza topping)
1/4 Cup Parmesan cheese

Directions:

1. After cleaning, slice the bell peppers in half.

2. Clean the inside of the peppers and remove the stem.

3. On a baking sheet, place the bell pepper shells.

4. Add a small amount of marinara sauce into each shell.

5. Then, top with mozzarella cheese and your favorite toppings.

6. Bake in a 350-degree oven for 35 minutes.

7. Let cool for about 5-10 minutes before serving to the kiddos.

8. Top with parmesan, and encourage the kids to eat it just like a pizza! Give them some napkins, because things might get a little messy.
