Brussels Sprouts with Bacon Lasagna Recipe

While on our road trip to Santa Cruz over Thanksgiving weekend, we stopped at a lot of local farm stands to collect some fresh produce from the Central Coast. Our eyes ended up being much bigger than our stomachs as we brought home enough Brussels Sprouts to feed at least a hundred people – ops! So what did we do? We ate Brussels Sprouts every single day for almost ten days so that we would not waste a single sprout. Since we were eating so many of them (and they are already not my kids favorite) I had to great creative. I started creating many different recipes (some good – some bad) and this Brussels Sprouts with Bacon Lasagna ended up being one of my all-time favorite new recipes.

Ingredients:

  • 1 Jar of your favorite pasta sauce
  • 1 package of lasagna noodles
  • 1 pound of Brussels Sprouts (chopped)
  • 1/2 cup of ricotta cheese (divided)
  • 1/2 cup of mozzarella cheese (divided)
  • 1/2 cup of parmesan cheese (divided)
  • 5-6 Strips of cooked bacon (we used Winder Farms)

Directions:

Heat the oven to 350 degrees
In a baking dish start layering in this order, and then repeat..

  1. Pasta Sauce
  2. Noodles
  3. Brussels Sprouts
  4. Bacon
  5. Ricotta cheese
  6. Mozzarella cheese
  7. *Repeat*

Then cook the lasagna in the oven for 35-40 minutes
