Caramelized Onion and Swiss Chard Pasta Recipe

One of my favorite things to do in the kitchen is to caramelize onions. It is so relaxing, and it makes my home smell amazing. While at Melissa’s Produce this week, they sent me home with some beautiful organic onions and fresh swiss chard. I couldn’t wait to cook something with the fresh produce when I got home.

Swiss chard is a great leafy green to incorporate into your kid’s diet. It is packed full of antioxidants, including beta-carotene and flavonoids. I always add some chopped swiss chard when making our salad mixture for the week. It’s beautiful colors make a salad bright and appealing.

With my kids having a lot of late nights at school this week, I wanted to make something filling yet packed full of nutrition. I decided to take the swiss chard and onions to make a flavorful pasta dish, and it came out amazing! I don’t normally eat pasta, but I ended up having an entire bowl!

It is very easy to prepare. For this recipe, I cut off the stems and then chopped the delicate leaves into 2-3″ strips. I did not toss out the stalks and saved them to sneak into my kid’s smoothies during the week. Just like spinach, the chard cooks very quickly by sautéing it for about 5-10 minutes in olive oil over medium heat.

Swiss Chard Pasta Recipe


1 Package of pasta
1 Onion from Melissa’s Produce
1 Bunch of Melissa’s Produce Swiss Chard
2 Cloves garlic
1/4 Cup olive oil
1/8 Teaspoon crushed red pepper (more if you like it hotter)
1/4 Cup chopped parsley
1/2 Cup Freshly Grated Parmesan
Salt/Pepper to taste


1. Cut the stems off the swiss chard. Chop it into 2-3″ long strips.

2. In a dutch oven, heat the olive oil.

3. Add the diced onion to the olive oil. Cook on medium/low heat for 20 minutes, continually stirring the onions. You’ll know that onions will be caramelized when they are a nice brown coloring.

4. Add garlic, salt, pepper, red, pepper and parsley. Cook on low heat for about 5 minutes.

5. Add the swiss chard to the mixture. Cook on medium heat constantly stirring for about 10 minutes.

6. Add cooked pasta to the dutch oven and cheese. Mix well.

7. Enjoy!
