Whenever my daughter and I see Caprese salad on a menu, we cannot resist ordering it. There is something amazingly delicious about the flavor combinations of tomatoes and cheese, mixed with some balsamic & fresh basil ~ oh my! Instead of doing the traditional burgers and hot dogs over Labor Day weekend; I decided to surprise my daughter by making Caprese chicken. And, since it was a holiday weekend, I kept it simple by doing it on a sheet pan – the prep time was less than five minutes! This recipe would be a perfect addition to your sheet pan dinners at home.
