Cauliflower & Celery Root Soup

Cauliflower seems to be the new “it” food. It’s popping up on more menus and in more incredible looking recipes than ever. It’s anti-inflammatory, antioxidant, and detox properties are believed to help prevent cancer as well as cardiovascular disease. This mildly earthy vegetable can stand on it’s own cooked simply, added for texture to dishes, or enhanced with delicious sauces. Roast it and it takes on a beautiful nutty flavor. Steamed and then mashed and you get a great low carb substitute for mashed potatoes.

Not to be outdone, celery root (celeriac) has health benefits similar to those of cauliflower and offers a decidedly more pronounced but incredible flavor to dishes if you’re a celery lover like me. Add to that when added to soups and puréed you get an unbelievable creamy texture without actually having to use cream.

Combined these two ingredients make for a healthy soup so velvety and delicious even your kids will love it.
