Celebrating a Love for Avocados

Avocado season is my favorite time of the year. Every morning, I wake up and make the kids and myself avocado toast for breakfast. I am always getting creative with the different toppings that go on our morning avocado toast, but there is nothing better than enjoying avocado toast when the delicious fruit is in season.

Why avocado toast? Every kid loves avocados, and it is a great way to get good monounsaturated fat and nearly 20 vitamins, minerals and phytonutrients into their daily diet. Plus, avocados contain less than one gram of sugar per 1-ounce, the least amount of sugar per serving of any other fresh fruit.

This avocado season, I decided to share my love for the fruit with our favorite friends. I invited some friends over one night to swim, play games, and share our favorite avocado dishes. While everyone thought that I was going to share avocado toast as my dish, I surprised everyone by creating some fun new recipes provided by the Haas Avocado Board.

One of the highlights of the party was the Agua Fresca de Aguacate drink. The refreshing and simple to make drink has become an all-time favorite of my kids, and I have been making it almost daily throughout the summer. The 100% fruit drink contains no added sugar, is made in less than 10 minutes and boasts a great amount of nutrition for kids.

Agua Fresca de Aguacate

4 cups Honeydew melon, seeded and cut into 1-inch cubes
1 ripe Fresh Avocado, halved, peeled, pitted and sliced, reserve 4 slices for garnish
4 cups water
⅓ cup Fresh lime juice
¼ tsp. salt

1. In a blender, add melon, avocado, water, lime juice, and salt.
2. Blend until smooth and frothy.
3. Serve over ice.
4. Add sugar to taste if desired.

Another dish that I made was a vegan avocado chocolate chia pudding. The sweet and creamy dessert was a favorite of all the kids and had the perfect amount of sweetness. What I loved about the recipe was how easy it was to make.

Vegan Avocado Chocolate Chia Pudding

2 ripe, fresh Hass avocados, cut in half and seeded
½ cup pure maple syrup
½ cup orange juice
¾ cup unsweetened cocoa powder
¼ tsp. kosher salt
2 Tbsp. Chia seeds

1. In a blender, combine avocados, maple syrup, orange juice, cocoa powder and salt
2. Blend until smooth stopping occasionally to stir mixture. Add ¾ cup water and blend until very smooth. Stir in chia seeds.
3. Divide pudding among six small bowls. Cover and chill at least 3 hours.
