Citrus Pork Chop Recipe

It is always a struggle to get the kids to eat pork chops. I often tend to overcook the meat making it end up dry and tough for them to chew. Instead of grilling the pork chops this past week, I tried something different by baking them in a citrus juice. What ended up happening, is that the juice soaked into the pork chops while baking, making a juicy and flavorful citrus pork chop that the children enjoyed. The best part of this recipe is that it can be prepared within just a few minutes allowing you to spend more time with your children.

What will you need?
1 package of pork chops (I always get the boneless because they are less expensive, and easier for the kids to eat
1 1/2 cups of orange juice
1/2 of a red onion
2 Tbl. of olive oil
Rosemary springs
Salt/pepper

Now comes the easy part..
In a dutch oven (if you don’t have one – get one! It will be your best friend in the kitchen) heat the olive oil. Once the olive oil is warm add the pork chops and sear for 2-4 minutes on each side. Add all the remaining ingredients, and cook the dish (still in the dutch oven) at 350 degrees for 20-25 minutes.

Viola! Serve with your favorite salad.
