Cooking the Paleo Way with Chef Nikki Ledford

Healthy eating should be a priority for the entire family, and what better way to learn a new way of cooking than a hands-on cooking class!  Friends are always a great resource and that’s how I found Chef Nikki Ledford of The Clean Plate.  Nikki is a Natural Chef with an emphasis on Paleo cooking, ancestral diets, and general health support through whole, real foods, say goodbye to pre-packaged food.   After graduating from Bauman College, a holistic nutrition and culinary arts academy located in Sonoma County, CA., Nikki moved to Southern California where she conducts cooking classes, offers private chef  services which include weekly meals prepared in your  home, customized menu, menu planning, grocery shopping (yes, grocery shopping) and meal preparation / packaging and clean up and continues to create healthy recipes to share on her website and blog.


As a busy family of five, I tend to get stuck in a rut with my weekly menu planning … until I met Chef Nikki.  The healthy recipes focus on seasonal fruits and vegetables and are prepared with whole foods, plus taste amazing!  I hosted a few friends at my home to learn more about healthy cooking which also was an opportunity to ask specifics questions about feeding our families while keeping such things as food allergies and other sensitivities in mind.  I hosted a few of my friends at my home to learn directly from Nikki how simple, and delicious, healthy eating can be.


Stepping outside your own comfort zone can be a bit intimidating, but Nikki’s recipes are easy to prepare with ingredients that easily found at stores like Trader Joe’s, Whole Foods, Sprouts and other stores offering healthy ingredients.  Luckily my girlfriends came hungry because we had plenty of tasty sampling to do!  Nikki started with preparing a Peach and Prosciutto Frittata; this fragrant delight is a one skillet meal and Nikki showed us how simple it was to make while giving us many substitution options for non-meat eaters or just to change up the recipe.

My friends and I also enjoyed Nikki’s recipe for a fresh salad featuring figs, blueberries and homemade dressing!  Truly, I never enjoyed figs as much as this.  Maybe it was the combination of the figs with the homemade dressing or the figs paired with blueberries, but this has become my favorite seasonal salad.

I’m a big fan of treats, really, who isn’t?  The recipe for lemon and coconut cookies is a healthy option for a lunch snack for the kids or an after-dinner treat the entire family will enjoy.  I found that you can save the ingredients for a few days to bake and serve warm.
