Cranberry French Toast Casserole

Cranberry French Toast Casserole
Ingredients:
1 Loaf of Texas toast bread (thick bread)
8 Eggs
2 Cups milk
1 Cup fresh cranberries (divided)
1 Tbl. sugar
1/2 Cup brown sugar
1 tea. vanilla
1 tea. nutmeg
Directions:
1. Cut the crust off the bread and then dice into 1″ cubes
2. In a sauce pan cook 1/2 cup of cranberries with sugar over medium heat until the cranberries have liquified.
3. Use a small strainer to strain the cranberry chunks
4. Mix the eggs, milk, vanilla, nutmeg and cranberry juice well.
5. In a Bakers Secret baking dish add the bread cubes
6. Then pour the egg mixture over the bread cubes
7. Top the mixture with remaining 1/2 cup of fresh cranberries
8. Refrigerate for 3 hours or overnight
9. Bake at 350 degrees for 45 minutes
