Crockpot Chicken Brunswick Stew


Since the weather has been so cold lately I have been using my crockpot to make soups, roasts, and stews. I love the way the house smells when  dinner has been cooking all day! Recently, I made a stew called Chicken Brunswick Stew. It was really light and had so much flavor. The recipe called for butter beans which I had never tried, but it turns out I loved them!


Here are the cast of characters you will need for this recipe! Most of these items you probably already have in your pantry.


Start by placing the chicken, chopped onions and  potatoes in the bottom of your slow cooker.


In a medium bowl, stir together chicken broth, tomatoes, tomato paste, Oregano, salt and pepper and then pour over the chicken and potatoes.


One hour prior to the end of the cooking time stir in the butter beans and the peas.


Cover and cook on low for 6-8 hours. About 1 hour prior the the end of the cooking time stir in the beans and peas. and remaining salt and pepper. When cooking time is up shred the chicken off the bone and place back in crock pot. Enjoy!
