This year, I have dedicated it to wellness and self-care. It is crucial to care for our health so that we can be the best for our children. One thing that I have incorporated in my New Year routine, has been a new wellness morning checklist.

The mornings can be hectic, trying to get three children out the door and off to school. I noticed that it was becoming easier than ever to forget to care for myself before starting my day. Make a nourishing salad bowl for lunch

One of the best ways to improve your wellness every day is a nourishing salad at lunch time. This simple recipe should be on your list this week and it contains a whole lot of protein and fibre to keep you healthy.


1 can chickpeas
1 tbsp smoked paprika
1 head romaine lettuce
1 handful spinach
½ grated carrot
1 tbsp chia seeds
1 tbsp pecans
1 tbsp olive oil
1 tbsp balsamic vinegar
1 clove minced garlic
½ roasted sweet potato
½ grilled chicken breast

To make your dressing combine the olive oil, balsamic vinegar and garlic in a sealable jar and shake.
In a dry hot pan, add chickpeas and smoked paprika and fry for 1-2 minutes.
Assemble your bowl with all of your veggies, chicken and dressing. Toss it all together and enjoy!
