Delicious Chicken Tostada Recipe
Instead of having our traditional Taco Tuesday, we mixed it up this week by having Tostada Tuesday. With my husband working late, and one kid at baseball practice, I had to figure out a recipe that could be served at different times throughout the evening. When making the recipe I realized that it is my all-new favorite weeknight dinner recipe. It is so simple to make, can be prepared in less than 10 minutes, and everyone in my family loved it (even my picky eater).
The toppings for the tostada can be made in advance (win-win for mom).
Ingredients for the topping:
3 Tbl. olive oil
2 tea. garlic
1/2 package of “Just Chicken” pre-cooked strips from Trader Joe’s (you can use other branded pre-cooked chicken strips)
1/4 red onion
1 zucchini
1 cup of corn
1 cup of pico de gallo
First chop the chicken strips, red onion and zucchini. Then mix all the ingredients into a large bowl and refrigerate until you’re ready to make a tostada.
Heat your oven broiler to high. Once it is fully heated then you’re ready to go.
Place a small corn tortilla on a baking sheet. Top with chicken mixture and sprinkle Monterey jack cheese on top. Broil the tostada for 6-7 minutes. Top with a little cilantro and avocado. Enjoy!
