Family-Friendly Lunar New Year Recipes

In celebration of the Lunar New Year, I went to Los Angeles to spend the evening learning some new recipes from the highly-acclaimed author and chef, Katie Chin. I first met Katie Chin years ago at an event in Orange County when she released her cookbook “Everyday Chinese Cookbook.” Since then, her cookbook became one of my favorites, and my family enjoys all of her delicious recipes that I make on a regular basis.

When I arrived at the venue, it was beautifully decorated for the Lunar New Year. There was a table set-up for us to enjoy dinner and recipe ingredients were on the kitchen island for us to begin creating recipes together. Before getting started, Katie Chin introduced us to one of her favorite food brands, Ling Ling Asian Kitchen. She talked about how it is a brand that she uses in her home on a regular basis and how it is one that she trusts.

After learning about her history with Ling Ling Asian Kitchen, Katie talked to us about some of her favorite Lunar New Year customs. Some of the customs and superstitions she shared with us were:

Refrain from using foul language or bad words on NewYear’s Day or they will follow you throughout the year.

Washing hair is not allowed because you will wash away your good luck for the year.

Greeting friends with oranges or tangerines during the New Year will ensure that your friendships remain intact.

No sweeping on New Year’s Day as you’ll sweep all your good luck out the door.

Stepping into new shoes on New Year’s morning to start your year off on the right foot (A Personal Favorite of Chef Katie).

Distribution of Red Envelopes (signifying Joy and Luck) filled with money to start the year with prosperity.

Then it was time for the fun to begin. Katie walked us through the process of learning how to make two super simple and delicious recipes; Kale and Ginger dish and Sweet and Spicy Green Beans. The two recipes are perfect for busy families like mine, and guaranteed to be a favorite in your household.

Once we were done making the two recipes, it was time for us to enjoy dinner together. Along with the two recipes that we made, we had Ling Ling fried rice, noodles, and potstickers. I think that I was the only one at the event who had never had Ling Ling potstickers before, and after hearing everyone at the dinner rave about them, I quickly learned why – they are delicious! I couldn’t resist eating many of the chicken and pork mouthwatering potstickers paired with the signature dipping sauce. I fell in love with them so much that I purchased some the next morning and served them to my family with the Ling Ling fried rice for dinner the following evening.

Kale and Ginger Dish
Serves 4

Ingredients:
1 large bunch of kale (rinsed with hard stems and center ribs removed and coarsely chopped)
1 Tbl fresh minced ginger
2 tea neutral oil (such as canola)
1 tea soy sauce
1 tea sesame oil
1/4 cup water
1 tea toasted sesame seeds

Directions:
Blanch kale in boiling water until bright green. Using a slotted spoon, transfer to an ice bath to cool. Drain and set aside.

Heat the oil in a wok or skillet over medium/high heat. Add the ginger and stir-fry until fragrant (about 30 seconds). Add the kale and stir-fry for a few minuted until wilted but still slightly crunchy. Add the soy sauce and sesame oil and stir-fry for 30 seconds. Sprinkle with sesame seeds and serve.

Sweet and Spicy Green Beans
Serves 4

Ingredients:
1 pound green beans (washed and trimmed, cut into 1-inch pieces)
1 Tbl neutral oil (such as canola)
2 Garlic cloves (minced)
1 tea fresh minced ginger
1/2 tea Sriracha sauce
2 tea soy sauce
1 tea oyster sauce
1 tea sugar
1 Green onion (green and white parts, finely chopped)

Directions:
Blanch the beans in boiling water until tender-crisp (about 3 minutes). Using a slotted spoon, transfer to an ice bath to cool. Drain and set aside.

Heat the oil in a wok or skillet over medium-high heat. Add the garlic and ginger and stir-fry until fragrant, about 30 seconds. Add the drained green beans, Sriracha, soy sauce, oyster sauce and sugar. Stir-fry for one more minute, then add the green onions and stir-fry for 30 more seconds.
