Fiesta Quinoa Salad with Garlic and Lime Grilled Shrimp

Lent is right around the corner, and I’ve been busy in the kitchen whipping up new recipes that the family will enjoy eating during Lent. Since I have been on a strict diet in the New Year, I wanted to create a dish that was full of nutrition, and one that my kids will still eat. With quinoa being one of my favorite things to cook with in the kitchen, I decided to make a fiesta quinoa salad and pair it with garlic and lime grilled shrimp. The result was delicious perfection, and even the kids asked for seconds.

Fiesta Quinoa with Grilled Garlic Shrimp

The dish is super easy to make, and you can easily make it in advance (perfect for nights when you get home late from a sporting event). I served the dish cold, so you’ll want to make the quinoa far enough in advance that it has time to chill before mixing with the ingredients. If you don’t have a barbecue to grill the shrimp (or the weather is bad) then you can sear them in a frying pan.

  • 1 cup of corn
  • 1 cup of black beans
  • 1/4 cup of chopped cilantro
  • 1/4 diced red onion
  • 1/4 olive oil
  • 1 Tbl. crushed garlic
  • 1 cup diced cherry tomatoes
  • Juice from 1 lime
  • 1/2 red bell pepper diced
  • 1 cup cooked and then chilled quinoa


1. Cook the quinoa and then chill it in the refrigerator
2. In a large bowl add all the ingredients. Let them marinate together for about 10-15 minutes.
3. Blend in the quinoa, and serve.
4. Easy..right!

Garlic and Lime Grilled Shrimp


  • 1 pound of shrimp
  • 4 Tbl. olive oil
  • 4 Tbl. crushed garlic
  • juice from 1/2 lime
  • Optional wooden sticks

1. Rinse and clean the shrimp well.
2. Add 3-4 shrimp to each wooden stick.
3. In a small bowl, mix the garlic, olive oil, and lime juice.
4. Using a brush, brush the mixture over the shrimp.
5. Grill the shrimp on your outdoor barbecue until fully cooked.
6. Serve with fiesta quinoa salad.
