Fig & Olive gazpacho

As we go into the warm summer months, it is the perfect time to cook with the fresh flavors of the season. One of my favorite springtime and summer dishes is gazpacho, and the chef at Fig & Olive was so generous to let us share his favorite gazpacho recipe. It is packed full of nutrition, and the kid’s love it! If you haven’t already planted tomatoes in your backyard, now is the perfect time to plant so that you’ll have the freshest tomatoes to make this flavorful soup.

Fig & Olive’s Andalucía gazpacho
Yields 4 servings

Ingredients:
2 lbs Tomato
¼ lb Red Bell Pepper
2 tsp Cumin
2 TBSP Sherry Vinegar
¼ cup bread (French baguette or bread of choice)
1 Hot House Cucumber
1 TBSP Salt
1 tsp Tabasco
2 cups water
½ cup Spanish Onion
1/3 cup olive oil

Preparation:
Peeled cucumber, remove seed from bell pepper, and blend all the ingredients together in a food processor. Season to taste. Chill and serve cold.
