Giveaway: Good Housekeeping Light and Healthy Cookbook


Bathing suit season is upon us, and I have been working hard at getting fit before hitting the beach with the kids this summer. Kohl’s Cares Merchandise program is selling a Good Housekeeping book, on how to drop five pounds for just $5. I love supporting the Kohl’s Cares Merchandise program because 100 percent of the net profit goes to children’ health and education initiatives nationwide. Since the program first launched, they have raised more than $208 million for local communities across the Country.

This colorful Good Housekeeping book has healthy recipes customized with weight loss strategies. Kohl’s has offered us a delicious guacamole recipe from the cookbook to share with our readers as a sneak peek into this book.

Guiltless Guacamole
Total time 15 minutes
Makes 3 cups or 12 servings

1 can (15 to 19 ounces) white kidney beans (cannellini), drained and rinsed
1 tablespoon lime juice, or to taste
1 jalapeño chile, seeded
½ cup loosely packed fresh cilantro leaves
¼ cup coarsely chopped
sweet onion (such as Vidalia or Maui)
½ teaspoon salt
1 ripe avocado, halved and pitted
2 plum tomatoes
Sliced basil leaves, for garnish (optional)
Baked tortilla chips or fresh-cut vegetables

1. In food processor with knife blade attached, puree beans and 1 tablespoon lime juice until smooth. Transfer to medium bowl.

2. In same processor, place jalapeño, cilantro, onion,
and salt; pulse until juicy
and thick.

3. With spoon, scoop avocado from peel into bowl with beans; mash with fork until mixture is blended, with some chunks remaining.

4. Cut each tomato crosswise in half. Squeeze halves to remove seeds and juice. Coarsely chop tomatoes. Stir onion mixture and tomatoes into avocado mixture until blended. If you prefer a little more zip, stir in additional lime juice to taste. Garnish with basil, if you like. Serve with chips or vegetables.
