Hatch Chile Polenta Chips Recipe
What is my favorite season? Hatch Chile season!! While I grow a lot of my produce in our small backyard farm, there are some rare fruits and vegetables I can’t grow like hatch chiles. There is only one place I go for produce outside of our backyard, and that is Melissa’s Produce.

Hatch Chile Recipes
There are so many options when it comes to cooking hatch chiles. Melissa’s Produce recently introduced a new item that I couldn’t wait to experiment within the kitchen. It is a Hatch chile polenta, which is amazing. Every kid loves potato chips..rights? So, I decided to take the polenta and turn it into chips. The result – my kids ate every last bite within minutes.
Hatch Chile Polenta Chips
Ingredients
1 Package of Melissa’s Hatch Pepper Polenta
2 Cups of Oil
1/4 Cup Parmesan
1/4 Cup Parsley
Salt/Pepper
Directions
1. Open the container. Then, slice the polenta into small strips.
2. Season with salt and pepper.
3. Heat the oil in a frying pan.
4. Fry the polenta cakes for about 5-10 minutes. Until golden brown.
5. Top with parmesan and parsley.
6. Enjoy!
