Hawaiian Halibut Recipe
Halibut is one of my favorite types of fish to cook. Every year, my husband goes to Alaska to bring us home a large amount of halibut and salmon to eat throughout the year. Since my husband could not attend this year, my dad still went bringing us home 1,500 pounds of fish for the year! Let’s just say that I will be sharing lots of fish recipes with you over the next couple of months. This week, I was sitting on the beach dreaming about Hawaii, when I made-up this Hawaiian halibut recipe – and it turned out amazing! (Even the kids loved it)
Did I mention it is easy? Well it’s that too!
Ingredients:
- 1 Large halibut steak
- 1/2 cup of pineapple juice
- 1/2 cup of bread crumbs
- 1/4 cup of panko bread crumbs
- 3-4 slices of pineapple
Directions:
1. Clean the halibut well using cool water
2. Cover the fish with bread crumbs before adding it to a small baking dish
3. Pour the pineapple juice around the fish
4. Top with the panko bread crumbs, followed by the sliced pineapple
5. Cook at 350 for 20-30 minutes, or until the fish is flaky.
