Heirloom Tomato Bruschetta Recipe

Tomatoes were gifted from Melissa’s Produce

The long-lasting warm weather is giving us extra weeks to enjoy summer produce. Last week, I visited Melissa’s Produce in Los Angeles, and I left with a basket full of the beautiful heirloom tomatoes. Eager to make a something with them for the family, I chopped a couple of them up, and made them into a fresh bruschetta.

Bruschetta is one of the easiest dishes that you can make. It is also healthy, and every kid loves it. Head to your local store or Farmer’s Market to get some heirloom tomatoes before the are gone for the season, and make your kids this delicious bruschetta for an after school snack.

2 Large heirloom tomatoes
1/4 Onion (diced)
5 Tbl. Olive Oil (we used Arianna Trading Company Extra-Virgin Olive Oil)
1/8 Teaspoon basil
1/8 Teaspoon Rosemary
1/8 Teaspoon Thyme
1/2 Teaspoon Salt
1/8 Teaspoon Pepper
Fresh Baguette

1. Dice the tomatoes and onions
2. Mix all the ingredients together
3. Refrigerate
4. Serve with toasted baguette

Tip: Allow the spices to marinate in the refrigerator for at least 4 hours
