Kid-Friendly Chicken Tortilla Soup Recipe
I have tried so many different versions of chicken tortilla soup before finalizing this kid-friendly version that even my picky eater will eat for dinner. The soup requires very little work, and can simmer on the stovetop while working on the kids homework.

Kid-Friendly Chicken Tortilla Soup
Ingredients:
1 lb. chicken (I used a rotisserie from the grocery store and used most of the meat)
1 onion
1 tea. cumin
2 garlic cloves
2 Tbl. Olive oil
2 cups of chicken broth
1 can of diced tomatoes
1 can of diced tomatoes with green chilies
1 cup of corn
Optional 1/2 cup of water
Directions:
1. In a dutch oven on high heat add olive oil, onion, cumin, and garlic. Cook for approximately 10 minutes or until onion is translucent.
2. Add cooked chicken and cook for approximately 5 minutes (allowing all the flavors to blend)
3. Then add chicken broth, tomatoes, and corn. If the soup is too thick, add 1/2 cup of water.
4. Cook covered on medium heat for 20-30 minutes.
5. Top with cilantro and your favorite toppings, and enjoy!
