Kid-Friendly Mother’s Day Recipe for Brunch During Quarantine

Honoring that special person in your life this Mother’s Day might look a bit different in 2020 in the wake of the coronavirus pandemic.

Luckily, there are ways to be creative with gifts made with love at home. Roberto Hernandez, Executive Chef for Catalina Island Company including its Avalon Grille and Descanso Beach Club locations, is sharing his delectable French Toast with Bananas and Nutella recipe especially for Mother’s Day at home this year.

It’s easy enough for the kids to cook themselves (with a little help here and there, depending on their ages) and sure to be a “mom-pleaser.”

The French Toast with Bananas and Nutella recipe is part of an ongoing Catalina At Home series of delicious, easy-to-make recipes developed by Chef Roberto exclusively for those who want to bring a taste of Catalina Island to their homes while sheltering in place. French Toast with Bananas and Nutella

French Toast Recipe

3 slices white bread (or Texas White or Brioche)
½ cup whole milk
2 whole eggs
1 tbsp ground cinnamon
½ tsp ground nutmeg
1 full spoon vanilla extract
1 fresh banana
4 oz. Nutella
4 oz. maple syrup
1 cinnamon stick
1 oz. powdered sugar
2 oz. butter

We’re glad you’re cooking with us today! Meet Chef Roberto Hernandez and his special helper for this recipe, Arianna! Arianna shows you the ingredients we’ll be using today.

In a mixing bowl, combine the ½ cup ​whole milk, 2 eggs, ground cinnamon, ½ tsp ground nutmeg, and 1 full spoon​ of vanilla extract.

Whisk until all ingredients until they are well blended.

Slice 1 fresh banana.

Add 4 to 5 oz. of maple syrup to a pan. Add one cinnamon stick.

Then in a hot pan add the banana and 1 oz. of cinnamon infused maple syrup. Cook and stir until bananas are golden brown.

Using a nonstick pan, add 2 oz. ​butter to the pan and let it dissolve. Then dip the bread in the egg mixture. Fry until golden brown.

Flip to cook the other side until golden brown.
