Kid-Friendly Paleo Pesto and Bacon Eggs Recipe

After my husband started Crossfit, he started talking to me about switching our family diet to Paleo. I was 250% resistant at first until I took a recent Paleo cooking class. Since then, I have opened my mind to the possibility and have been exploring different recipes. What I have learned is that it is not as hard as many would think, and the recipes can be simple, tasty and kid-friendly. One of my favorite recipes that I made this week was Paleo pesto and bacon eggs. The kids love it, my husband loves it and I love how simple it is to make!


Bacon! To make it easy to cook this dish throughout the week, I made a bunch of bacon ahead of time. Bacon does not have to make a huge mess in your kitchen when baking it. I covered a cookie sheet with a cookie rack and placed the bacon on the rack. Then bake it at 350 degrees for 15-20 minutes. Viola! Perfectly cooked bacon. You’re welcome.


Paleo Pesto Bacon and Eggs
(make one serving)
2 eggs
1 strip of bacon
1 tablespoon pesto (I use asparagus pesto)
1 teaspoon of butter (or Ghee)

1. Cook the bacon ahead of time
2. Melt the butter in a frying pan
3. Add the two eggs, and cook until scrambled
4. Mix the cooked eggs with pesto sauce and 1 slice of crumbled bacon
5. Serve warm of cold
