Kid-Friendly Stuffed Peppers Recipe


Stuffed peppers is just one of the creative ways that I get my kids to eat their vegetables. During the summertime, our garden produces so many bell peppers, that I have to great creative in making recipes like this delicious kid-friendly stuffed peppers recipe. The only advice that I have is – don’t mention the word *peppers* when serving it. For some reason, my youngest always thinks of something spicy when we say that word, so we end up calling them stuffed veggies.



4 bell peppers (red or green)
1 pound of ground beef
1 cup of Monterey jack cheese
1 cup of canned corn
1 cup of cooked rice
1 teaspoon of cumin
1 tablespoon of olive oil
2 green onions (chopped)



1. Cut the top off of the bell peppers
2. Cook the rice per the package ingredients
3. On the stove top, heat the oil
4. Then add the green onions and ground beef, and cook until well done
5. Add the corn, cumin, rice and cheese to the beef mixture. (cook well)
6. Take the mixture and stuff the bell peppers
7. Cook in a 350 degree oven for 10-15 minutes
8. Serve warm with a salad


These are quite filling, and we found that even our eleven-year-old can only make it through half of one of these bell peppers. Enjoy!
