Kiwi Berries and Heirloom Tomato Tart with Basil and Ricotta
What do you do when you receive beautiful Baby Heirloom Tomatoes from Melissa’s Produce? You make something delicious. Last night, dinner was a disaster. I attempted to make a recipe that failed and found myself digging through the freezer for food to feed the kids. That ended up being hot dogs.
Ugh. I quickly learned what food snobs my kids have become after feeding them organic, fresh food every night of the week. I’ve never been that macaroni and cheese + hot dogs kinda mom. After all the dirty looks and complaining I got from the kids over dinner, I decided to surprise them with a delicious dessert.
About Kiwi Berries
Kiwi berries are very sweet, and I thought they would compliment the heirloom tomatoes, and the sweet cheese mixture perfectly. And, it was incredible.
For the crust, if you’re a mom with a lot of free time on your hands, you can make it from scratch. I, however, don’t, so I used the gluten-free pie crust from Trader Joe’s. Don’t worry. The kids won’t know the difference.
The recipe is simple, You can make it within minutes, and your family will think you’ve slaved over it for hours. Enjoy!!
Kiwi Berries and Heirloom Tomato Tart
Ingredients:
16 oz. Ricotta
1 Cup of Kiwi Berries from Melissa’s Produce (sliced)
8 oz. Whipped Cream Cheese
1 Cup Parmesan
2 lemons (Juiced)
4 Basil leaves (chopped)
1 Package of Melissa’s Produce Baby Heirloom Tomatoes (sliced)
1 Tablespoon Soviia Agave (vanilla)
1 Teaspoon Melissa’s Produce Pine Nuts
1 Pie Crust
Salt and Pepper
Directions:
1. First, cook the pie crust per the package instructions. Then, let cool.
2. In a bowl, mix the ricotta, cream cheese, parmesan, lemon juice, basil and agave.
3. One the pie crust has cooled, fill with the cheese mixture.
4. Top with sliced tomatoes, kiwi berries, and pine nuts.
5. Chill for 4 hours.
6. Serve cold.

It quickly became my kid’s favorite dessert ever. They devoured every last bite, not leaving a crumb behind. Plus, I loved using Soviia Agave vs. sugar because the company helps to support children around the world. Also, their product features a much lower glycemic index. Making it a better choice than sugar for my recipe. My kids loved the kiwi berries so much that I added them to their avocado toast the next morning.
