Lemon Garlic Shrimp Orzo Recipe


Lemons..lemons..lemons! Our garden is blooming with lemons and that means that everything I make for the next month will more than likely feature lemons. After five days away from home at the most magical place on Earth, I was inspired to get creative with ingredients in my kitchen, and the one thing I could make was this incredibly delicious lemon garlic shrimp orzo. It was light, fresh and delicious. Perfect to detox from the churros, popcorn and corn dogs we have been noshing on for the past couple of days at Disneyland.



Lemon Garlic Shrimp Orzo

Juice from 1 lemon
2 Garlic cloves (minced)
1 Tbl. olive oil (we used lemon infused olive oil)
1/4 cup of parsley
1 pound shrimp
1 tea. salt
1 tea. pepper
2 cups of cooked orzo



1. Cook the orzo per the package instructions
2. While the orzo is cooking, heat the olive oil in a dutch oven
3. Once the olive oil has heated add the garlic, shrimp, salt, pepper and lemon juice


4. Cook the shrimp for 7-9 minutes – or until fully cooked.
5. Drain the orzo
6. Add the orzo, shrimp mixture and parsley
7. Serve warm
8. Enjoy!
