How to Make Gourmet Kid-Friendly Scrambled Eggs

Trying to get kids to eat a well-balanced diet is a challenge for almost every mom that I know including myself. With breakfast being the most important meal of the day, I have created this kid-friendly gourmet egg recipe that my kids love. Even the little boy across the street who has never liked eating eggs loves coming over to my house on the weekends to eat my egg recipe.

Tip: I will make a double or triple batch of this recipe over the weekend so that I can quickly reheat it for the kids before they run out the door to school.

Gourmet Kid-Friendly Scrambled Eggs

Ingredients:
3 tablespoons of diced onion
2 ounces of Canadian Bacon diced
4 large eggs
2 tablespoons milk
¼ teaspoon kosher salt
1 tablespoon olive oil
½ cup fresh ricotta cheese

Directions:

1. Whisk eggs, 2 tablespoons of milk chopped chives, and ¼ teaspoon salt in medium bowl until well blended.
2. Pour olive oil in heavy medium nonstick skillet over medium heat.
3. When olive oil heats up, add diced onion and Canadian bacon.
4. When the onion looks transparent add the egg mixture and stir with heatproof silicone spatula until eggs are almost cooked but still runny in parts, tilting skillet and stirring with spatula to allow uncooked portion to flow underneath, about 2 minutes.
5. Remove from heat.
6. Add ricotta and stir just until incorporated but clumps of cheese are still visible.
