Making Gluten-Free Weeknight Meals Easy with the Instant Pot

Have you ever used an Instant Pot before? I remember getting one for Christmas a year ago when everyone was talking about the Instant Pot. However, after seeing kitchen horror stories as a child come to life in my mother’s kitchen with her pressure cooker, I never seemed to take it out of the box.

When our friends at Melissa’s Produce invited me to learn more about The Gluten-Free Instant Pot cookbook, I was curious to learn more. I arrived at Melissa’s Produce ready to enjoy some delicious bites, and I quickly learned that I was going to savor more than just a few tasty bites.

I first met with the authors of the cookbook, Jane Bonacci and Sara De Leeuw. They signed their cookbook for me, and then they welcomed everyone to take a seat while they went over the dishes we were going to taste. Everything looked delicious, and I couldn’t wait to sink my tastebuds into the gluten-free dishes.

Instant Pot Salad Recipe

The cookbook features over 100 gluten-free recipes that parents can easily make in their Instant Pot or electric pressure cooker. The cookbook has everything from breakfast dishes to desserts. I sampled eight different recipes from the cookbook, and they were all delicious.

Gluten-Free Al Pastor Tacos

My two favorite dishes were the Tacos Al Pastor with Pineapple Salsa and the Double Chocolate Fudge Cheesecake. If you’ve been following my food journey over the years, then you already know that I am not a big dessert person. But, this cheesecake was unlike anything I have ever savored before. I enjoyed every last bite of it, and I might have been caught going back for seconds.

Gluten-free cookbook

After lunch, the two authors have a detailed demonstration on how to use the Instant Pot. They showed everyone how easy it is to use, and how there is no need to be fearful of the appliance like I have been.

It was another delicious afternoon at Melissa’s Produce, and I can’t wait to share some of these gluten-free dishes with my family at home this summer. The Gluten-Free Instant Pot cookbook is currently available online at
