Mexican Avocado Toast Recipe

One of my favorite things to make the kids for breakfast is avocado toast. The breakfast dish is packed full of nutrition and helps the kids get a healthy start to their day. The only downside is that avocado toast can get a little boring when eating it multiple times a week, so I decided to put a new Mexican inspired twist on my avocado toast recipe.

The fresh hatch chiles in my refrigerator from Melissa’s Produce and bread from La Brea Bakery helped to inspire me to make this recipe. The toast has a nice kick to it, and not too spicy for my picky eater. The minute that the kid’s tastebuds sunk into my Mexican avocado toast, they were in heaven…and asking me for more. If you like avocado toast, you’re going to ‘love’ this delicious recipe! Enjoy!

Mexican Avocado Toast
Yield: 1 piece


1 Fresh slice of La Brea Bakery bread
1/2 Avocado (smashed)
1/4 Hatch chile (diced)
1/4 Cup of Salsa Verde de Molcajete
1 Egg
1/4 Cup of crema
Cilantro (chopped)


1. Dice the hatch chile and smash the avocado.

2. Toast the bread.

3. Cook egg to desired style.

4. Top the toasted bread with salsa verde, avocado, hatch chile, and then the egg.

5. Sprinkle some pepper and cilantro on top, and finish with a drizzle of crema.

6. Enjoy!
