Mexican Street Corn ‘Elote’ Avocado Toast

Avocado toast is the key to my heart. I eat it almost every morning, and I love experimenting with different toppings. Lately, I have been thinking a lot about Mexico and have been craving authentic elote (aka Mexican street corn).

I’ll never forget the time that I drove my kids from La Paz to Todos Santos for lunch. We were sitting at a cafe when my kids heard the bell from an elote cart. I blinked, and they were gone. Running after the elote cart to get a taste of delicious elote.

I recently got some fresh and ripe avocados and serrano peppers from Melissa’s Produce. The minute that I opened the avocados, there was no bruising, and I couldn’t wait to sink my tastebuds into them. The elote avocado toast is simple to make, and your kids are guaranteed to love it.

Mexican Street Corn Avocado Toast

Mexican Street Corn ‘Elote’ Avocado Toast Recipe


2 Pieces of toast
2 Avocados from Melissa’s Produce
1 Can of corn (or one corn on the cob from Melissa’s)
2 Tbl Cotija cheese (grated)
1 Serrano pepper (optional)
1 Lime
Chile lime seasoning blend from Trader Joe’s
Dash of olive oil

Unique Avocado Toast Recipe


1. Toast the bread.

2. In a bowl, mash the avocado.

3. In a frying pan, heat the olive oil. Then toast the corn for about 5-10 minutes.

4. Top with the toast with the mashed avocado. Then add the corn and serrano pepper.

5. Finish the toast by topping it with a dash of salt, pepper, cotija cheese, and the chile-lime seasoning.

6. Squeeze 1/2 the lime over the toast before serving.

7. Enjoy!!
