Mozzarella Stuffed Meat Balls Recipe
After homeschooling my daughter for a year, my love for cooking started to rub off on her. Within just a year, I was able to fully train her to cook an entire meal (except for the oven) on her own. While at a one-day cooking camp at Surfas Culinary District this summer, she was inspired to make our family an Italian dinner after learning how to make mozzarella stuffed meat balls.
Last night, she made her grocery list, and then we went shopping together. It was a special time to bond with my daughter, and to help teach her some of the skills that she will need when she is older. I was able to teach her about price comparison and how to inspect foods before purchasing.
It was fun sitting at the kitchen table watching her prepare this special meal for our family to enjoy, and then getting to come in and help her when she needed it.
Mozzarella Stuffed Meatballs
1/3 cup milk
1 cup of Italian breadcrumbs
2 pounds of ground beef or turkey
1/3 cup of minced parsley
3 eggs, lightly beaten
3 minced garlic cloves
1 tsp. of kosher salt
1/2 tea. black pepper
1/3 pound of mozzarella, cut into 1/2 inch cubes
Olive oil for frying (parents only)
2 jars of your favorite pasta sauce
1 package of your favorite pasta noodles
Directions:
1. Preheat the oven to 350 degrees
2. In a large bowl combine ground beef, milk, bread crumbs, parsley, eggs, garlic, salt and pepper.
3. Mix well with hands.
4. Take the mixture and roll into 2 inch balls
5. Once they are formed into a ball, press a slice a mozzarella into the meat balls
6. In a large skillet, heat olive oil
7. Fry the meat balls for about 3-4 minutes on each side.
8. Bake in the oven for 8-10 minutes.
9. Serve with sauce and noodles.
