Nopales Con Huevos Recipe: Cactus & Eggs

Have you ever had nopales (aka cactus)? Well, now is the time to try it. Nopales Con Huevos is one of my favorite breakfast dishes to enjoy while in Mexico, and after getting some fresh cactus leaves from Melissa’s Produce, I couldn’t wait to make it at home for my kids to enjoy.

Nopales Con Huevos can be prepared many different ways. When in Mexico, it is usually offered at an omelet station where guests of the restaurant can add their favorite vegetables to the dish. Nopales can also be prepared three different ways, but pan-fried or grilled is my favorite way to enjoy it. While boiling is the most traditional way to prepare the cactus.

Don’t be intimidated when it comes to preparing the cactus leaves. It is super simple, and only takes a couple of minutes. Once you have the cactus leaves prepared, get ready to go on a delicious epicurean adventure with this delicious breakfast dish.

Nopales Con Huevos Recipe

Nopales con Huevos
Ingredients:

2 Cactus leaves from Melissa’s Produce
1/2 onion (chopped)
3 Tbl. Olive oil
2 Tomatoes (diced)
1 Serrano Pepper (diced)
2 Tbl. Fresh cilantro (chopped)
4 Eggs
Salt/Pepper to taste
Corn Tortillas

Directions:

1. Prepare the nopales (cactus leaves).

2. In a frying pan, heat the olive oil.

3. Add the onion, and cook for about 5-8 minutes.

4. Add the chopped nopales, and cook until the coloring of the cactus changes to dark green.

5. Next, add the tomatoes, cilantro, and pepper (optional if you have kids who don’t like spice).

6. Then, add the eggs. Cook until the eggs are fully cooked. Finish by adding salt and pepper.

7. Serve with freshly made corn tortillas.

8. Enjoy!!

Also, enjoy using cactus to make a fresh cactus salad (ensalada con nopales).
