Paleo Oregano Roasted Chicken Recipe


Tonight I attempted to make my first Paleo dinner, and it was a success!! I was cooking dinner for a friend who is Paleo, and I wanted to make sure everything that went into the dish was something that she could enjoy. I started out making my normal beer roasted chicken when it came to mind that gluten is in most beer. After a couple of tweets with one of my Paleo friends and some research on the internet, I learned that even the traditional chicken stock I purchase it not good for a Paleo diet. I ended up altering my traditional recipe, and the kids thought it tasted 110% better…so maybe this is the start of me cooking more Paleo for our family.

Here is the recipe, and I promise your family will love it!

Oregano Roasted Chicken

1 whole organic chicken
2 Tbl. olive oil
1 cup of homemade chicken stalk (I will share the recipe in a separate post)
2 Teaspoons of Oregano (fresh is better if you have it)
1 Teaspoon of paprika
1/8 teaspoon of salt
1 Sweet potato
3-4 carrots
(1/2 onion is optional)


1. Clean the chicken well and then put into a deep roasting pan.
2. Cover the chicken with olive oil and then season with the spices
3. Cut the sweet potato and carrots, and then put all around the chicken.
4. Add the chicken stalk. (over the vegetables)
5. Cook for 1 1/2 hours at 350 degrees.
6. Enjoy!
