Paleo Stuffed Avocado Tuna Cups

With my husband on a paleo diet, I am always looking for new recipes to make for him. One of my favorite things to make him for dinner on a weeknight are avocado tuna cups. They are super simple to make, healthy and delicious. When it comes to making anything with tuna, I always use the purest product available on the market with SafeCatch tuna being my number one brand of choice. Why? Healthy Kid-Friendly Tuna Recipe

Paleo Avocado Tuna Cups

Ingredients:
2 large organic avocados (diced)
1/4 red onion (chopped)
2 Tbl. chopped cilantro
1 can of SafeCatch tuna
1 juice from one lime

Avocado Tuna Recipe

Directions:

1. Scoop out the avocado and then dice (keep the shells)
2. Drain the can of tuna, and add to a medium size bowl (shred with a fork)
3. Add the lime juice, cilantro and red onion – mix well with a fork
4. Using a spoon, add the mixture to the avocado shells
5. Serve with a side salad
