Red Wine Marinated Rib Eye Roast Recipe
Over the past 15 years of marriage, we have always had a traditional Italian Christmas dinner with fish on Christmas Eve, and pasta on Christmas Day. We wanted to try something different this year, and for the first time we made a roast for Christmas. We got a beautiful Rib Eye Roast at Costco, and it was a deliciously tender dinner.
This recipe is not only good for a holiday meal, but any special occasion. It took about 45 minutes to prepare the roast, and it was done in just a couple of hours. Your guests will love every bite of this roast when served at your next dinner party.
Ingredients
- 4-5 pound Rib Eye Roast
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup of red wine
- 1 Tbl. dijon mustard
- 1/4 cup brown sugar
- 1 Tbl. worchester sauce
- 2 Springs of fresh rosemary
- 1 spring of thyme
- 2 Tbl. of minced garlic
We began by marinated the roast overnight. (I used the Reynold’s Oven Turkey Bags)
- Cover the roast with salt and pepper before putting it into the bag to marinate
- In a bowl mix the following ingredients well; red wine, dijon mustard, brown sugar, worchester sauce, rosemary, thyme and garlic.
- Then add the marinate to the bag over the roast, and marinate in the refrigerator overnight.
- Preheat the oven to 325 degrees
- Take the roast out of the bag, and place in a baking dish.
- Pour the remaining marinade over the roast
- Cover with foil
- Bake for 1 1/2 -2 hours
- During the last 1/2 hour, remove the foil
Check the roast throughout the cooking process to ensure it is at the correct temperature. For a medium roast the temperature should be 160, and 170 for a well done roast.
