Roasted Garlic and Heirloom Tomato Flatbread Recipe

When roasted garlic and heirloom tomatoes come together, it is pure bliss. I have recently been kinda obsessed with Trader Joe’s pre-made flatbread lately. It is so fresh, light, and makes for an easy weeknight dinner. I’ve been having fun creating new recipes using their flatbread, and Melissa’s Produce brings the bread to life.

Heirloom Tomato Flatbread Recipe

Another one of my favorite foods is burrata cheese. I always have a container in my refrigerator at all times. When the kids came home late from school one-night last week, and I was faced with the question of, “What to cook?” I used some of my favorite staple ingredients to make this tasty flatbread recipe.

The recipe only took minutes to make, and after cooking in the oven for 10 minutes, dinner was served. This entire recipe can be made within 15 minutes, making it the perfect weeknight family meal. To make the recipe faster on a weeknight, I recommend roasting the garlic in advance, and having it stored in your refrigerator.

Roasted Garlic and Heirloom Tomato Flatbread Recipe

2 Trader Joe’s pre-made pizza crust (found in the bread aisle)
1 Container of Melissa’s Produce Baby Heirloom tomatoes
1 Container Burrata Cheese
1 Package Pesto
1 Head of Garlic
3 Tbl. Olive Oil
4-5 Leaves of fresh basil
Salt and Pepper


1. Pre-heat the oven to 450. If you have the roasting option, select that option.

2. Using a sharp knife, slice off the top of the head of garlic.

3. In an oven safe container, place the head of garlic. Then top with olive oil, salt and pepper.

4. Roast the garlic for about 20-30 minutes.

5. Stop for a moment to enjoy the amazing aroma in your home.

6. Let the garlic cool. Once it has cooled, it is easy to pop the cloves out of the shell.

7. Take the Trader Joe’s flatbread and drizzle some olive oil on top. Then spread the pesto sauce.

8. Next, add the burrata cheese and sliced Melissa’s Produce heirloom tomatoes. Finally, add a little salt and pepper to taste, and top with basil leaves.

9. Bake in a 425 degree oven for 10 minutes, and enjoy.

It is guaranteed to become your new favorite weeknight recipe.
