Roasted Garlic and Parmesan Fennel Recipe

One food that I have been dying to experiment with is fennel! When I received a box full of fresh produce from Melissa’s Produce, I was so excited to see fennel.

I didn’t know how to prepare it, and after doing some research, I found out that most people roast the vegetable. So, I used two of my favorite ingredients to roast with: garlic and parmesan to create this recipe.

I planned to roast the fennel one night, and then use it in a pizza recipe the next night. Little did I know that my kids wouldn’t be able to stop eating the fennel after I roasted it. I had to hide a couple of pieces from them to be able to use on top of the pizza the next night.

How to cut fennel

Preparing the fennel was easier than I expected. I cut off the stems. Then cut the fennel in half, and then into 1/3″ slices. Easy peasy.

Ingredients for Roasted Garlic and Parmesan Fennel

2 Fennel bulbs from Melissa’s Produce
1/4 Cup Olive Oil
2 Garlic Cloves
1/4 Cup Parmesan
Salt and Pepper to Taste

Directions for Preparing Melissa’s Produce Fennel

1. After slicing the fennel, place the pieces on a baking sheet.

2. Top the fennel with olive oil, garlic, parmesan, salt, and pepper.

3. Roast the fennel at 350 degrees in an oven for 30 minutes.

4. Serve the fennel with your favorite meat or chicken recipe. Or, top it on a pizza or salad. Also, you can just eat it on its own.

This is one of my new favorite recipes. It is healthy, delicious, and your kids are going to love it. I can’t wait to experiment more with the vegetable in the kitchen, and to incorporate it more into my recipes.
