Stuffed Hatch Chile Recipe

It’s the most delicious time of the year – Hatch Chile Season! I love chiles, and hatch chiles are my ultimate favorite. Earlier this week, I went to Melissa’s Produce to learn about the new cookbook, “The Camp & Cabin Cookbook,” and to enjoy some tasty dishes made with hatch chiles.

After tasting some of the recipes from Laura Bashar’s new cookbook and getting inspired to get the family back into the kitchen, I brought some fresh hatch chiles home and got the family together for a fun night of cooking in the kitchen.

Stuffed peppers/chiles are one of the easiest ways that I have found to get my kids to eat peppers or chiles, so I decided to make stuffed hatch chiles paired with some grilled carne asada and freshly made hatch chile salsa. The result was a tasty family meal that had my kids asking for seconds. (The only change I would make to the recipe would be to add black beans, but because of a bean allergy in my home, I couldn’t add them)

Stuffed Hatch Chile Recipe

10 Hatch Chiles
1 pound ground beef or ground turkey
2 garlic cloves
2 Tbl. olive oil
1/2 onion
1 can corn
1 cup of diced cherry tomatoes
1/4 tea salt
1/4 pepper
1/2 cup of shredded queso
1/4 cup of crema
1/4 cup of cilantro


1. Slice the hatch chiles in half and clean out the seeds.

2. Dice the onion and garlic.

3. In a sauce pan, heat the olive oil and cook the onion and garlic for about 5-10 minutes.

4. Add the ground beef to the onion mixture and cook until the meat is fully cooked.

5. Put the meat mixture into a large bowl.

6. In the bowl, add the diced tomatoes and corn. Mix well.

7. Stuff the chiles with the meat mixture.

8. Top with queso.

9. Cook in a 400 degree oven for 20 minutes.

10. Top with cilantro and crema.

11. Enjoy!
