Summer Corn Salad Recipe

Summer might be coming to an end, but the produce is fresher than ever. I had been traveling all week, and the first thing my kids asked me when I got home was, “What’s for dinner?” I knew that I had two hatch chiles from Melissa’s Produce still in the refrigerator and a couple of ears of corn that I had planned on making elote with before my trip, so I put everything I had in my garden and refrigerator together to make this refreshing summer corn salad – and it was delicious!
The best thing about this recipe is that you can add the hatch chiles into a portion of the dish, leaving a “bland” salad for your picky eaters. After mixing all the ingredients, I put a small amount aside for my picky eater and then added the best flavor of all – the hatch chiles from Melissa’s Produce for the rest of the family! The recipe is simple, tasty, and you’ll find yourself wanting to make it every week to pair with grilled meats.
Summer Corn Salad
Ingredients:
3 Ears of grilled corn
1 1/2 cups of diced cherry tomatoes
1/2 cup of feta cheese
1/4 Red onion (diced)
1/4 cup of olive oil
1/4 cup of balsamic vinaigrette
2 Tbl Chopped fresh oregano
1/4 cup of chopped english cucumber
2 Hatch chile (diced)
Salt
Pepper
Directions:
1. Take all the ingredients.
2. Toss.
3. Enjoy!
