Summer Italian Bread Salad Recipe

If you’re looking for a refreshing, new and easy summer side dish that is sure to impress your house guests, then look no further than this “Italian Bread Salad.” This original recipe created by my mother-in-law (MIL) chef extraordinaire received rave reviews last week from our dinner guests. My grilling husband served it with his perfectly smoked Tri Tip and garlic green beans, paired with a smooth Pinot Noir. This meal was so tasty, we’re going to have to hit the “menu replay” button one last time before the end of summer.


What you’ll need:

4-6 – 1” thick slices of crusty French bread (slightly stale); Cut in bite size pieces

1 large or 2 medium ripe tomatoes, chopped coarse

½ cup of red onion, chopped

1 large or 2 medium cucumbers, peeled, deseeded and chopped coarse

1 cup each red and yellow peppers, chopped

2 tablespoons capers, rinsed

1 tablespoon minced garlic

¼ cup or more of Feta cheese, crumpled

½ cup olive oil, mixed with ¼ cup red wine vinegar

Salt and pepper

What to do:

In large salad bowl layer bread, tomatoes, onion, cucumber, peppers, capers and garlic. Cover and refrigerate. An hour before serving, pour over dressing and Feta cheese. Season with salt and pepper to flavor. Toss well before serving. Serves three to four adults.
