Summer is here and for many of us that means dinner on-the-go. Wendy shares her favorite on-the-go curried chicken recipe with us.

Once school is out, schedules have become less complicated and the weather warms up; we like to pack up to enjoy dinner on the beach at least once a week.  Dining on the sand is a cherished family tradition which challenges me to have several on-the-go dinner options that taste just as good once we hit the sand.  One of my favorite picnic-basket recipes is curried chicken served on naan; its easy to make yet tastes light and refreshing even with the summer heat.  The ingredients are simple and easy to find in stores, but require a bit of chopping and dicing.

Ingredients are as follows:

  • 6 tablespoons mayo
  • 1/2 teaspoon grated orange rind
  • 1 1/2 orange juice
  • 1 – 1  1/2 teaspoon curry powder
  • 1/2 teaspoon grated fresh peeled ginger
  •  2 1/2 cups diced roasted skinless chicken
  • 3/4 cup seedless green grapes, halved
  • 1/4 cup dried apricots, diced
  • 1/4 cup thinly sliced green onion
  • 2 tablespoons chopped unsalted cashews
  • 1 package naan or middle eastern bread (Trader Joe’s has a fresh selection)
  • 2 cups watercress, optional

Combine first 5 ingredients in a large bowl, stir with a whisk.

Then, add chicken and next 5 ingredients (through cashews) to mayo mixture, tossing to coat.  I’ll share a tip, when dicing the apricots, lightly coat the knife with cooking spray to prevent the dried fruit from sticking to the blade.

Spoon about 3/4 cup curry chicken mixture onto naan or other middle eastern bread. If you like a like crispy addition,  top with watercress, fold over and enjoy!

This is a great recipe to make ahead, chill and serve when you’re ready. simply place container inside your picnic basket with side salad, fruit, plates, napkins and your favorite beverage.  Dinner at the beach or concert in the park doesn’t have to mean stopping by a fast food restaurant or sandwich shop on your way, make something light and easy to take along.  Just remember to enjoy your family and the gorgeous Orange County summer.
