Summer Tomato Salad Recipe

Our backyard tomato plants have been working hard all summer to provide our family with an abundance of fresh tomatoes. But, as the summer nights are slowly coming to an end, I have found myself sifting through the leaves of our tomato plants to find the last tomatoes that our plants will provide this year. That is why I love Melissa’s Produce so much because they seem to find those hidden tomatoes when we can’t find them in our backyard, and yet they taste just as good as the ones we grow ourselves.

After a quick visit at Melissa’s this month, they sent me home with some of their heirloom cherry tomatoes, and I made this quick (and simple) summer tomato salad recipe. What I love about this recipe is that you can cook it and have it on the table for your kids within 30 minutes, making it perfect for a weeknight family meal.

Summer Tomato Salad Recipe

2 Packages of Tortellini (cooked and rinsed)
1 Package of Melissa’s Produce Heirloom cherry tomatoes (halved)
1 Container of Ciliegine Mozzarella (Halved)
1/2 Cup of basil (chopped)
1/3 Cup of Olive Oil
1/4 Cup of Parsley (chopped)
Salt (to taste)
Pepper (to taste)
Balsamic glaze


1. Cook the pasta per the package instructions. Drain. Rinse.

2. In a serving bowl add: cherry tomatoes, mozzarella, basil, olive oil, parsley, salt, and pepper.

3. Once the pasta has cooled, add it to the mixture. Blend well.

4. Serve on a plate and drizzle balsamic glaze on top.

5. Ps. It is even better the next day after all the flavors have marinated.
