Sun-dried Tomato Pasta Primavera Recipe

My kids love when I make pasta, however, I don’t love the mess that it makes in my kitchen. There is always sauce splatter on the stovetop, and unless the kids properly wash there plates then I’m stuck with hard to clean pasta sauce on the dishes the next morning.

Sun-dried Tomato Pasta Primavera Recipe
Ingredients:
1 package of your kids favorite pasta
1 bottle of marinara sauce
2 zucchini (chopped)
1/2 yellow onion (chopped)
2 cloves of garlic (minced)
2 Tbl. olive oil
1/2 cup of sun-dried tomatoes
(optional parmesan cheese)
Instructions:
1. Chop the zucchini and onions, and mince the garlic
2. In a dutch oven, heat the olive oil
3. Add the zucchini, onions and garlic to the dutch oven. Cook over medium heat for 5-6 minutes
4. Add marinara sauce, and cook for 10-15 minutes over low heat
5. Cook the pasta per package instructions
6. Drain pasta and top with sauce and optional parmesan cheese
