Walt Disney World Resort Shrimp with Tomato and Feta Compote Recipe #DisneySMmoms

What does a foodie bring back from Walt Disney World? Recipes of course! We enjoyed some of the most flavorful dishes at the Walt Disney World Resorts, and brought the Disney flavors home with us with the “Cooking with Mickey and the Disney Chefs Cookbook.” Our first night home from Disney World, I made the most delicious Shrimp with Tomato and Feta Compote from the Disney Grand Floridian Resort.

I was able to make this dinner in less than ten minutes, and my husband went back for multiple helpings. I served the recipe with a fresh summer pasta recipe and a small green salad. I hope that you enjoy trying this flavorful recipe.

2 Tbl. olive oil
14-15 small shrimp
2 Roma tomatoes
1 garlic clove
3 Tbl. of white wine
1 Tbl. of fresh lemon juice
2 Tbl. of freshly chopped cilantro
2 Tbl. of crumbled feta cheese
2 Tbl. of butter

Heat the olive oil in a large skillet under hot. Add the shrimp and sauté for 1 minute. Then add the diced tomatoes and garlic. Sauté for an additional two minutes until the shrimp is done.

Add the white wine and lemon juice. Simmer until reduced by half.

Add the cilantro, feta cheese, and butter. Stir until the butter is melted and the sauce is creamy.
